Pretty similar to stock honestly. But using forescan to adjust for ride height is an absolute, otherwise your rig will think it is jumping and that creates a harsh ride.
Tire pressure will also affect the ride but all in all I've no issues and am happy with the set up.
C sidewalls will be your only longer term issue. I used the stock tire set up for ~25k miles on lots of rocks and trails (rubicon type stuff) and no tread issues.

Coolant below 230 I think is fine and you probably won't see above 223 very often.
Correct, once you hit a "slightly" higher than typical temp the numbers will pop up. If memory serves 223 is the number that pops up for coolant, can't recall the others.
